"When refining white sugar, all vitamins and minerals are removed," explains Fineberg. “Coconut sugar does not go through such a rigorous refining process, so it contains traces of minerals. That being said, you would need to eat a lot of sugar to get measurable benefits from these minerals. “Some of the minerals you find in coconut sugar – albeit in small amounts – are iron, zinc, calcium and potassium, and short chain fatty acids.
The nutritional information doesn't seem to show much of a difference between coconut sugar and normal cane sugar, but are their benefits at a different level? "Coconut sugar has a lower glycemic index (GI) than cane sugar or even maple sugar," said New York City-based holistic nurse Victoria Albina, N.P., MPH. Foods with a lower GI are absorbed more slowly, which reduces the harmful insulin peak. "
According to Albina, the GI value of coconut sugar is 35 ± 4, while that of white cane sugar (sucrose) is 65 ± 4. Researchers believe that this lower value can make coconut sugar more attractive to people with diabetes or seekers out a sweetener that doesn't dramatically affect their glucose levels. However, additional research is required.
In addition to nutritional information, coconut sugar can be a preferred choice for several reasons for other reasons.
